Amber's Kitchen Tomato Soup

INGREDIENTS:
1 large butternut squash, (About 3 cups of cooked squash)
2 Tablespoons butter
1/2 cup finely diced onion
1 clove garlic, minced
3, 14.5 oz. cans hunts fire roasted diced tomatoes
2 cups chicken stock
2 teaspoons salt
2 Tablespoons sugar
2 teaspoons dried basil
2 teaspoons Italian seasoning (herb blend, not my jar seasoning that I previously posted)
1/2 -1 cup heavy cream, *optional .
.
Cut the squash in half, lengthwise. Scoop out the seeds and pulp from each half. Place both sides cut-side-down in a 9x13 baking dish. Add enough water to come about 1/4 inch up the sides of the squash. Cover with foil and bake at 350 for one hour, or until it is fork tender. Let cool a few minutes, then scoop out the flesh from the skin, and plop it into a blender. (The squash can be cooked in advance, and cooled in a container in the fridge for up to 4 days before using.)
.
While the squash is cooking, in a medium pot, melt the butter and sauté the onion until soft and translucent. Add the garlic and cook for an additional 30 seconds. Scoop the onions and garlic into the blender with the squash. Add one cup of broth. (*note depending on your size of blender this may need to be done in two smaller batches. Be careful that hot ingredients when blended can expand and leak out of the blender) blend well, then add back to pot with the remaining broth and seasonings. Then add the tomatoes to the blender, blend well and add to squash/broth. Heat over a medium flame for about 10 minutes, stirring often. If adding cream, reduce heat to low and add cream to avoid the cream from curdling. Serve immediately. Enjoy! .

Classic Deviled Eggs

Yield: Makes 12 deviled eggs
The recipe, as written, is a fantastic base for classic deviled eggs. You could do a million variations of this recipe. My favorite is to add a few crumbles of blue cheese to the filling and instead of paprika, sprinkle cooked, crumbled bacon on top of the deviled eggs. Wow. Also, I prefer red wine vinegar here but you can really experiment with any type of vinegar you have on hand. If you enjoy making and eating homemade mayo, this might be the time to break it out since the mayo flavor really comes through on deviled eggs. Good tasting mayo is key here.
Ingredients
  • 7 large eggs
  • 3 tablespoons mayonnaise, light or regular
  • 1 teaspoon yellow prepared mustard
  • 1 1/2 teaspoon red wine vinegar
  • Dash of Worcestershire sauce
  • Dash of hot sauce (like Tapatio brand)
  • Salt and pepper to taste
  • Paprika for sprinkling
Directions
  1. Place the eggs in the bottom of a saucepan and cover with cold water by at least an inch. Bring the water to a rolling boil over medium-high heat. Immediately take the saucepan off the heat, cover and let the eggs sit for 15-16 minutes. While the eggs cook, fill a large bowl with ice water.
  2. Carefully drain most of the hot water out of the pot (keeping the eggs from rolling out) and slosh the pan side to side to crack the shells of the eggs. Scoop the eggs out with a slotted spoon and place in the ice water bath for 3-4 minutes. Peel the eggs under a stream of warm running water.
  3. Slice each peeled egg in half lengthwise. Scoop out all of the yolks into a small bowl. Discard the two ugliest egg whites (or let your kids eat them with a sprinkle of salt like mine love to do). Mash the egg yolks into small pieces. Stir in the mayonnaise, mustard, vinegar, Worcestershire sauce and hot sauce. Add salt and pepper to taste. Stir or whisk vigorously until the filling is thick and creamy.
  4. Fill a quart-size ziploc bag with the filling (pressing it into one of the corners) and snip the corner off the bag. Squeeze the filling into the 12 remaining egg whites. Dust with a sprinkle of paprika and chill until ready to serve.

Buttery Peas with Thyme

2 tablespoons butter
1/2 cup yellow onion, finely chopped (about 1/2 medium onion)
2 teaspoons sugar
1/4 teaspoon salt
2 medium garlic cloves, finely minced
3 cups frozen peas
1/2 teaspoon dried thyme (or 1 teaspoon fresh)
1/4 teaspoon freshly ground black pepper

In a 12-inch nonstick skillet over medium heat, melt the butter and add the onion, sugar and 1/4 teaspoon salt. Cook until the onion is softened, about 2 minutes. Stir in the garlic and cook until fragrant, about 30 seconds.

Stir in the peas and thyme and cook, stirring often, until the peas are just heated through, about 3 minutes. Season with black pepper (and additional salt if desired) and serve immediately.

Baked Zucchini Fries

3 medium zucchini, sliced into skinny sticks
2 large egg whites, beaten
1/2 cup whole wheat bread crumbs (we make our own)
2 T grated Parmesan cheese
1/4 tsp dried basil
Pinch of dried oregano
1/4 tsp garlic powder
Salt and pepper, to taste

Preheat oven to 425°. Spray a baking sheet with cooking spray. Set aside.

In a small bowl, beat egg whites with a fork until frothy.

Put the breadcrumbs, basil, oregano, garlic powder and cheese on a plate-I used a pie tin. Mix well.

Dip the zucchini sticks in the egg whites and then into the bread crumb mixture, make sure all sides get coated well. Place the sticks on the prepared baking sheet. I did the sticks one by one.

Bake at 425° for about 20 minutes or until golden brown and a little crispy. I turned over the fries half way through. Serve warm. We like to dip ours in marinara sauce.
